Lemon Muffins
2 cups of all purpose flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 whole lemon
1 teaspoon pure lemon extract
4 tablespoons of butter
2 whole eggs
1/2 cup of sugar
1 cup of milk
12 muffin cup muffin pan (1 dozen)
12 natural muffin wrappers
1. Grate the lemon rind into a small bowl using a small grater or planer and set aside.
2. Melt the butter over low heat, watching carefully, in a small saucepan and set aside.
3. In a large mixing bowl, mix together using a large whisk, the flour, salt, sugar and baking powder until thoroughly combined.
4. In a medium-sized bowl, whisk together the eggs( crack open in the bowl), milk, lemon extract, lemon zest, and a squeeze of half-a-lemon (or both halves if you like) and butter, very lightly, until just combined.
5. Add the wet ingredients to the dry and mix together with a wooden spoon to form the muffin batter.
6. Place muffin wrappers in mffin pan cups and carefully spoon muffin batter into the muffin cups.
7. Place the muffin pan in the oven at 325-350 degrees, depending on the heat of your oven, for about 25-30 minutes.
8. When the time has come to 25-30 minutes, take the muffins out of the oven and let cool. Then pick up when cool, serve and eat!
